Our cocktail program is classically focused with inspiration drawn from the history of the building and the city itself. The ingredients may be familiar and the presentation simple and classic, though each cocktail has a deeper story to tell for those who have time to listen. We pull inspiration from the Chef’s menus and use of interesting, seasonal ingredients. Building off of rotating core classics with a foundation twist and diversity in spirit options.
Meet Our Chef
Chef Rece Hogerheide brings over a decade of culinary experience to his role as Executive Chef at Detroit Foundation Hotel. A native Michigander, Chef Hogerheide weaves his passion for local, sustainable ingredients with exceptional cuisine and a warm guest experience to welcome locals and visitors to The Apparatus Room.
Prior to his work with Aparium, Chef Hogerheide held positions at local Michigan restaurants such as Gather and is also one of the Founding Chefs of Felony Provisions which is known for its fermentation; butchery; cheesemaking and charcuterie products and pop-up dining events throughout Michigan.
